Compare a menu item's recipe cost, monthly overhead and selling price, then save a new selling price.

Before you start

Select the property and have Restaurant, Bar or Kitchen viewing access. Allocated overhead and margin figures require accounting viewing access; changing the selling price requires menu management access. Add the item's recipe and ingredient costs before using its full cost to set a price.

Steps

  1. Open the F&B workspace and choose Cost & pricing. You can also choose Cost & pricing from Inventory → Recipes to open the selected menu item.
  2. Use Search menu items to find an item. Use the Cost coverage filter to show All items or Needs attention, and select the item you want to review.
  3. Set Overhead month. Choose Refresh costs to reload the figures.
  4. Under Cost per plate, review Tracked ingredients, Small-ingredient allowance, Recipe base cost, Allocated overhead and Total cost per plate. Expand Ingredient breakdown to inspect quantities, costs and each ingredient's treatment.
  5. In Selling price & profit, enter the proposed Selling price in the displayed currency. Review Net selling price, Profit per plate and Margin, together with the displayed tax basis. Unsaved price preview indicates that the proposed price has not been saved.
  6. Choose Save price and wait for Selling price saved. Recheck the saved amount and current price estimate.
  7. Expand the selected month's sales report to review the recorded monthly results. Use All menu items to return to the list.

Expected result

The menu item has the saved selling price. Its current price estimate shows the effect of that price on the available cost figures. Editing today's price does not change the recorded sales or costing basis in a historical monthly report.

If cost or profit is unavailable

Resolve missing recipe costs, review the selected month's overhead, and confirm the selling-price and cost currencies match. Use Review overhead for allocation issues and update the recipe for ingredient issues. An unavailable figure is not zero.

If someone else changed the menu item, choose Reload price and review their saved price before submitting your change again.
